Small quick dinner. I just had surgery to remove a kidney stone this morning. But minimal discomfort and I need to move a little after not moving much the last week

Paul Prudhomme’s Cajun meatloaf, roasted sweet potatoes, cauliflower, and garlic sautéed green beans. I cut the cayenne from the recipe to not scare off the kids. So far so good. image

Grilled peppercorn Turkey tenderloin from Aldi, garlic couscous with Pecorino Romano, and sauteed shredded Brussels Sprouts with walnuts.

There were G & T’s.

it’s a keeper. really delicious. more time consuming than my quickie recipe because you sautee the vegetables and then need them to cool down before mixing into the meat mixture. but worth the extra effort when you have a little extra time.

Last night and tonight because even though I’m home I’m still behind. Last night was salmon crusted in sesame seeds and a little dressing. Brown basmati and broccoli. Tonight. Chicken thighs. String beans. grilled poatoes. Yum yum. Promise I washed these plates :joy:

From my marathon pork chop marinating session, vietnamese pork chops from the freezer (defrosted with the fish sauce missing from the marinade ) flattened with a mallet before grilling. I made a quick nuoc cham because the marinade wasn’t sweet enough, apparently.

Vegetarian made a common dish for us all - noodles with black mushrooms. I thought there was also a vegetable, so I didn’t make my usual slaw even thought I had ordered the ingredients, but then there wasn’t. We did have salad to start, though.

Grillmeister didn’t scrape the marinade off as it was supposed to have been, but the pork chops were still pretty tasty. Nice change-up. My ideal vietnamese pork chop meal at home, though, is plain rice and tangy cabbage or broccoli slaw to cut the pork. More in the freezer, so next time.

Sweet lime old fashioneds tonight, because I finally got the various citrus shrubs started last night.

Last night was a simple meal because one person had tummy distress from some unfortunate eating over the weekend.

Khichdi (rice and split green mung beans this time) with potatoes in a tomato gravy. Same meal for everyone except youngest kiddo who is off khichdi at the moment. Very comforting - I have been oddly craving khichdi.

The “what’s available” take on this Bon Appetite beef rice noodle salad. One of the best meals of the past week. Substituted jalapeño, a sliced rib eye, and used a mix of available veggies. Final sub was basil for the mint.

Last night was a bit of a use stuff up meal. Korean pork meatballs bought from my favourite Korean supermarket. With those sweet potatoes’ ;diced, par boiled and dusted with potato starch and fried. Also used up cauliflower leaves, stir fried with Shaoxing wine, soy sauce and fish sauce. Finished with a liberal squirt of hoisin sauce and siracha. We have now taken to dining on this small table in the corner of the bedroom as the dining table in the living room is loaded with laptops, monitors and wires. It also helps separate work time from non work time.

Yes, actually it is. They have two kinds: peppercorn and rotisserie, but they both taste similar. It is not something I cook often because its such an easy way out, but every once in a while, its good when I feel like cooking without actually cooking :grin:.

Usually ends up being very tender and flavorful, however most of them have a vein or fiber of some kind that runs straight through the middle. Last night’s was minimal but other times it is enormous and I have to play the role of surgeon before cooking. I really wish they would just remove this before packaging. That’s my only complaint.

Yes, it is great for freezing and very compact. A good low-stress weeknight meal.

Thanks! I do feel a bit better. Started taking allergy and cold meds more regularly. I’m sure the turmeric and other spices didn’t hurt.
