What’s for Dinner #56: The No Place Like Home Edition - April 2020

Whole wheat it is. I call this a cheat crust because it’s Trader Joe’s whole wheat dough that I freeze.

I haven’t yet found an unfussy pizza dough recipe that I really like, whole wheat or otherwise. My further attempts at homemade pizza dough are on hold until yeast and flour are easier to come by.

Us, too. The people in the Lebanese deli where we buy our za’atar say it goes on everything.

After trying za’atar on more foods, I’m on Team Za’atar.

Boring steamed veg? Za’atar it!

Need a quick-fix dip? Za’atar and yogurt! And on and on.

Now we keep a little bowl of the stuff on the dining table next to the salt and pepper.

The carrots were actually my favorite part :joy: - very easy, and a riff on an old Ottolenghi recipe that has since been oversimplified (by me).

Continuing to support local restaurants, we had outstanding takeout from Corso 98 in Montclair. We enjoyed an excellent center cut pork chop, a melt in your mouth filet mignon, clams casino, and crab cakes. We had an awesome heart shaped flourless chocolate cake with java chip gelato (not pictured) for dessert. It all went great with an excellent R&B Malbec.

Sausage making day! I made 10 pounds of merguez, but unfortunately I was almost out of casings, so I was only able to make about 2 pounds of links. The rest will be frozen as bulk sausage, but I cooked up some casing-less links for dinner tonight with a side of tzatziki and Brussels sprouts gratin:

Used a nice slab of skirt steak to make stir-fried beef paired with kyoto negi tops from my garden. It was really tender thanks to my fussy method of using both velveting and a pinch of baking soda to tenderize. I’ve tried to do either or, and it’s never as tender as doing both.

I ruined a couple of nice Cod fillets I made for dinner Friday. Went way overboard dusting the fish with an off brand Cajun seasoning that was probably 95% seasoned salt. Crushing fail. My bad humor carried into late afternoon today when DW mentioned she was going to put out a plate of cheeses & crackers. My thought immediately was, “uh. No.” So it was on me to pull together a last minute meal. Turned into eggs and deli meat sandwiches with left over home fries. Served its purpose.

We achieved a free turkey from Shop Rite (“free” LOL yeah, gotta spend $400 in a certain amount of months to get it!), so we had that with all the usual Thanksgiving sides tonight. I worked today so into the slow cooker it went. Ended up being pretty good. No crisp skin but not dry.

I’m exhausted. Tomorrow may be a takeout night depending when I get out of work. Can’t have grandma over and the BF is working late. All the Chinese takeout spots around here are closed. There’s the makings of a Greek tragedy in here somewhere.

I marinated a chicken in shawarma seasoning, lemon juice, and olive oil and smoked it. Folded the carvings into grilled flour tortillas with tzatziki, harissa, tomatoes, and lettuce. Grilled herbed zukes and homemade sweet potato fries on the side.

Still craving Chinese food, but still exploring the freezer & loads of fresh veg, so tonights dinner = Lop cheung steamed over rice & a brocolli, mushroom, garlic stir fry seasoned with a little oyster sauce & chili crisp. DH deemed it very worthy :grin:

I made pupusas tonight, having finally “scored” masa harina in a recent grocery delivery.

Well, one (adventurous) kid and I had pupusas. Other had quesadillas with common sides of grilled corn, green beans and black beans. Another adult had grilled chicken with the green beans. And another just ate some potato - still nursing that abused tummy.

I must say that maseca is delicious! I used bob’s the last time around, and it was good, but this was something else!

Oh, I thought I’d try making a plain tortilla from the same dough to see how a really fresh one would taste - mind blown (mine and kid’s - I shared) - and I don’t even like corn tortillas.

Day 533288952 in quarentine. Grilled chicken thighs in a spice rub, broccoli, sweet and regular fries, cucumber salad and a little tzatziki-ish dip.
