I used to work around the corner from a Jewish deli…they would make me lox omelets for lunch.
I make my own version, too. It’s my daily work brunchfast (after outmeal and banana or apple). Biscuit or muffin, beaten egg in the nuke for 43 seconds ( bowl lined with bacon fat). After 43 in the nuke, top with cheese to melt. lightly butter biscuit/muffin, ham on bottom, hot egg/cheese on top. There’s my sandwich. I always use real cheese (medium cheddar or coljack), unlike the “American” that McD’s uses. The cheese is the difference maker to me. Like to use good ham, too.
Agree about the cheese and ham. I’ve never allowed a slice of that yellow weirdness to cross my threshold. And one of my favorite egg meals is a sunny side up atop a nice thick piece of GOOD ham, with toast for the mopping up. Bonus for some grilled pineapple on the side, because the first time I ate a fried egg as an adult - I was on a ferry from Calais to Dover (yes, there were ferries before the hovercrafts and certainly before the Chunnel). The crossings were often rough. Most of my group was kind of seasick. I, inexplicably, was hungry.. So off to the ship’s restaurant. And that’s what I had to eat. On retrospect, sounds suspiciously like an English breakfast, except for the pineapple. Maybe it was a combo English breakfast and luau …
Grilled pineapple would go good with almost anything.
Just like bologna, if you saw American “cheese” being made, you probably wouldn’t eat it. I can still tolerate it; just not a great choice for my tastes.

I dont miss that employer at all, but I miss the lovely folks at the deli. I stop in whenever Im in that part of town.
Agreed about the runny whites. I use a kitchen torch to take care of any under cooked whites while leaving a nice runny yolk

Same here. I have 3 over easy fried eggs most mornings although I do loved poached eggs too.
As some kitchen torches can be very aggressive, I turn mine down to the lowest level to maintain a flame. But each torch is different
