What are your 3 favorite cakes to make?

I have two favourite cakes that I make each year. First a Christmas Cake; a fruit cake that cakes me a weekend to make (Stir Up Sunday) with macerating the dried fruits in brandy, making candied pineapple and orange, mixing it and baking it (the latter requiring several hours). Between Stir Up Sunday the cake is liberally douse in more brandy — two tablespoons every couple of days. Then Christmas Eve eve I make marzipan before covering and icing the cake on Christmas Eve.

Second one is a Swedish Mid-summer cake with a strawbery and whipped cream filling.

Third one is Opera Cake for no better reason that it is technical to make and contains coffee.

Oh! How could I forget about Gingerbread.
I make it with Pear Juice as part of the liquid and diced Crystalized Ginger.

Advice from shellybean on CH:
Icing: Reduce sugar to 8 oz instead of 12 oz
Advice from articshark: To double, make 2 half- sheet pan cakes and cut in half rather than quarters. Cut cardboard to fit. This will fit on fridge shelf.

For a big, double cake, I did not double the icing recipe; I did 1 ½ recipe. This fits in the mixer. If you want to do 2 times the icing recipe, you need to do in 2 batches.

I just refell in love with pineapple upside down.

Had some crappy wine laying around, so explored what to do with shtty wine. Crack cake I now like.

Angel food is one my mom handed down. Love that texture.

Every year I make a bourbon peach praline upside down cake (a riff on Ina Garten’s plum cake tatine), the adult birthday cake with white wine from Food 52 (which I top with dark chocolate icing and sandwich apricot preserves between the layers instead of raspberry and milk chocolate), and my friend’s grandmother’s recipe for red velvet cake. These are all birthday cakes. I have some new cake recipes saved that I am looking forward to making - one is David Liebowitz’s almond flour and plum cake, and the other a buttermilk vanilla cake from Snacking Cakes. And actually, both of these cakes were made by the same friend.

So many friends love this cake; I had no trouble distributing a lot of it around!

If you just take your time, the cake isn’t that difficult.

I think it looks like it’s a lot more work than it is, pretty impressive!

I am late to the cake-baking party, have gone down the rabbit hole of cakes only in the last couple of years.

The two cakes I have made over and over throughout the years are 1) an old Gourmet Magazine recipe for lime and coconut cake, and 2) a blueberry buckle (aka “boy bait”) from King Aurther.

More recent favorites shared on CH and HO include:

Difficult to narrow down to three, but these are what I make most often:

Thank you! I last visited Abel’s in 1982 and I have (somewhere!) the brochure with that apple cake recipe, and made it a long time ago. I lived in P’ville for a time, then. I thought there was an Apple Hill in WA state, too.
