Love songs and negotiations - my spouse and I have a 46 year marriage and I took a huge breath and insisted on this after deep reflection, now coming out of being schizo and into peace. Doesn’t mean I have to forgo another Shun knife…LOL

Excellent. I have a whole lot of age-in-place changes I want to make in my condo. Especially redo the bathrooms. The rest is pretty maneuverable. Already got the one-floor thing. I’ve got the money ready, it’s just waiting for the Covid backlog for designers and craftspeople to subside. But I’m definitely there mentally. I don’t really care if the person who buys it from my estate has to tear out everything, that’s what happens.

Can you sharpen knives on it?
You probably could, but it is soft enough that it could make a mess of the counter. If I needed a knife sharpened just a bit, as opposed to merely honing, I have an old Sab steel that is pretty aggressive. Just bear down a tad. Yikes! Since I got a better set of water stones (Sharpening Supplies house brand) and less aggressive steel (F. Dick sapphire) I have not needed to go there. Phew. BTW, it is not sapphire. That is just what they call it. It is between fine and polish.
