I put them in ziplocks and they got very soft; maybe I should have left them on the counter.
Is this what you baked as a loaf as well? I’ve got a few ripe bananas to use up.
The double chocolate banana loaf(3bananas) is directly from Smitten Kitchen, it’s so filled with chocolate that it borders on decadent!
The muffins , from Baking Mischief (1 banana) are based on SK recipe, just reduced in quantity to make 5 standard muffins, Don’t be tempted to make 6 standard muffins as they are too small. Both the muffins and loaf stay fresh tasting for several days. The small cake is doubled the muffin recipe, 2 bananas, but I only had 1 1/2 bananas and added an apricot to make up the volume needed.
