The offspring had a vile case of influenza-A on his birthday…so Easter Sunday will be the carrot cake he missed out on with the fam!
First bake of the month. Koulourakia, which are Greek butter cookies. They are served year-round, but are especially associated with Easter. Some recipes, such as this Cypriot koulourakia, incorporate mastic and mahlepi / mahleb into an Easter version of the cookie.
This was my first time to bake Kolourakia. I used this Lemon and Olives recipe that calls for vanilla and brandy, but no orange zest or orange juice. I used Metaxa, a Greek Brandy.

It’s not a Seder with my family without flourless chocolate cake! I made it last minute so it was piping hot when I put it on the cake plate and it kind of deflated a little. But! It was eaten hot which was extra delicious

I had some sour cream to use up and this coffee cake from King Arthur was perfect. Simple to put together and very tender and fluffy. I really liked that the topping was just sugar, cinnamon and vanilla, as I’m not a big fan of streusel or crumb toppings. Next time I have half a tub of sour cream to use, I will probably return to this recipe. A little cardamom in the batter would be great too, as well as the optional nuts in the topping.
I baked 6 hot cross buns today. I winged the recipe a bit, using bread flour, currants, dried cherries, vanilla extract, cardamom, cinnamon, clove, and ground ginger. Brown sugar glaze afterwards. Some recipes call for apricot jam as a glaze.
I weighed the dough into 75 gram sections. I baked the buns at 400 convention on for 18 minutes to reach 209 F inside.
Edit: I like the texture I achieved. Not traditional, close to a cross between brioche and good baked Char Siu Bao (without the Char Siu).
I saved some dough in the fridge, to bake tomorrow or Sunday.

I have printed it out, as I’ve got all the right ingredients. I like a streusel topping, but it can get gummy and “damp” if not eaten quickly. Hoping the sugar/cinnamon mix will be better. I have turbinado sugar that I might use for a deeper flavor.
you’re so right about the topping. i can’t count the number of times i wanted to make a coffee cake for a gathering the next morning, but i talk myself into making something else because the streusel doesn’t hold well.
Cinna-buns with my niece. We made a half recipe and remembered to halve everything but the icing. These didn’t rise well either time, and have that squidgy mall cinnamon roll texture. Delicious but so sweet. Glad we only made a half recipe.
Cheesy jalapeño corn bites (and mini loaves that I forgot to take a pic of) — ie cornbread with creamed corn, lots of finely minced jalapeños, and plenty of cheese.
I couldn’t find all my silicone mini cupcake liners, so I used the floral molds, which actually turned out quite cute when inverted.
