Thanks to biondanonima I now know how to make homemade sorta-ricotta with no mishaps.
The problem is what to do with the whey. I hate to discard it. What do you use it for?
pancakes
waffles
bread…
anything where buttermilk is called for.
home made only keeps 2-3 days tho.
