Honestly, better mice than rats. We’ve had a couple of infestations in the past decade, and you just have to call in the professionals because they get smart and learn to avoid traps. And those bastards will chew on anything, down to sponges and bars of soap. They’ll even gnaw on the exposed corners of cabinet doors. And they chewed through a dishwasher hose. Plus, they can climb, so nothing is safe. (Long after they were gone, I found bits of rat shit on high bookshelves in my dining room).
Guess what… Rats! I just got a call from my guy. He is on it thankfully. Former mill in major redevelopment i.e. teardown 1/4 mile away.
Well, rats on your rats! (See, there’s a reason it’s used as a pejorative.) Hope your guy takes care of them tout de suite.
Mon: I did the Zuppa Toscana
Tue: I did the take-out pizza (Hawaiian and Deluxe)
Wed: Mexican beef enchiladas instead of Greek lemon oregano chicken.
Beef enchiladas, I’ll use a canned red enchilada sauce:
Thu: a big fat Greek lemon oregano pork chop
Re: Wednesday - I got tired of never having a can of enchilada sauce when I needed/wanted one. So experimented and found that this Cookie and Kate version works fine for our tastes. I most-often substitute a 15 oz can of tomato sauce plus 1/4 cup water in place of the tomato paste and broth. Excess freezes well.
What a helpful recipe. We wimpy eaters who love enchilada sauce thank you. Plus so much cheaper.

SAT: Pork chops. Ottolengi’s potato-apple gratin with gruyere. Baby peas.
SUN: Lentils with chorizo, greens, and yellow rice (gift link from the NYT / COTM).
MON: Steak on the grill. Leftover gratin. Green salad.
TUE: Pizza blanca with potato, bacon, scallion. Green salad.
WED: Homemade pork gyoza with water chestnuts and chives. Scallion pancake. Rice.
THUR: Caldo Verde with added halibut. Focaccia.
Thank you! I have a hard time finding gluten-free enchilada sauce that isn’t ridiculously expensive. Have you tried the green enchilada sauce from that site?
I did hear her say that. For me, the “worst” are rotini and angel hair. But they do all taste the same, right?

Those raddiotore (sp?) and wagon wheels seem so much worse to me. And I avoid spaghetti when possible because of how overcooked it always was when I was a kid - except at my grandparents.
End of the week confusion when it comes to meal planning. Yesterday was #1 son’s birthday but I had a rehearsal and he was in flight from Toronto. So birthday dinner planned for tonight (thursday). I had prepped something but at about 10P I called him and he wants something totally different. So, tonight beef burritos (yawn) and yellow cake with chocolate frosting.
Friday, #2 son’s girlfriend is coming down from Penn State for the weekend. They plan on making some tiktok crispy rice dish, I’m making steamed bok choy and poke nachos. They are fun to cook with.
Saturday, singing group is doing a cabaret night so probably an early pizza dinner with salad.
Sunday, up in the air. Depends on what I find at the farmers market. Maybe the zuppa toscana that is getting good play on WFD. Or something involving delicata squash as I stare down the end of fall produce season.
The best application I ever had the wagon wheel pasta in was a mac and cheese at a steakhouse. It had a bunch of gruyere and garlic breadcrumbs that had been tossed with bone marrow before toasting. It worked because the sauce helped with the overall texture and eating manageability for the shape. But it is definitely in the novelty category, I think.
…makes mental note to reverse engineer this mac and cheese…

Barilla & DeCecco both make them, so I’d guess they’re probably somewhere near you (Instacart is great for these investigations without much effort)
You are right. At Wegmans near me. I guess I don’t look for them so I don’t see them.
