Weekly Menu Planning - May 2024

That sounds extremely painful! I hope your finger heals quickly. Is it on the dominant hand? It must be difficult doing day-to-day tasks like cutting vegetables and washing dishes (assuming you hand wash yours).

I keep a couple boxes of Finger Cots around for protecting bandaged cooking and gardening and papercut injuries. Hope you’re healing quickly. https://www.instacart.com/products/23238704-walgreens-assorted-sizes-finger-cots-30-ct?csr=true

Hi, everyone. Cooking for 3 in the Boston burbs. The craziness of last week has passed, and I’m hoping for a quiet (or quiet-ish) week ahead. I tried a new-to-us veggie delivery service and the first order arrived yesterday, so you’ll see some * veggies in the week’s plan. Unfortunately, I forgot to specify “no beets” so guess what we also got?

Sun: Although it is chilly and rainy, our town’s annual weekend of celebration is going on - which means DS is heading to the carnival shortly and eating junk for dinner. I’m making chicken and dumplings (SK Keepers) for me and DH. We’ll bundle up to go watch the fireworks later, though I’m not sure what time - “dusk” might be earlier when it’s cloudy like this. I also made a quinoa salad with asparagus*, oranges, pistachios, and dates for my lunches this week.

Mon: meatloaf, roasted carrots*. Maybe mashed potatoes.

Tues: cowboy spaghetti, salad*

Weds: fried rice with bok choy* and other ingredients tbd

Thurs: breaded pork chops (or maybe some pork and some chicken, depending on what I find in the freezer), roasted Yukon gold potatoes* and shallots*, broccoli

Is your “no beets” due to the hassle of cooking them, or due to lack of good recipes for using them? I’m no longer up for the hassle of cooking them from raw (have done so in the past), but can suggest a couple favorite recipes for use: Russian Salad from The New Midwestern Table, Farro/Beet skillet from NY Times,

Thanks OOD. Yep, it was my dominant hand. Blood everywhere. Much better now, and let’s face it, it’s smart that I’m finally up to date with my tetanus shots. But it wasn’t any fun.

This is a really smart thing to have in the kitchen. I had some of that skin glue stuff that sallyT recommended a few years back, and was grateful for it, but it wasn’t totally up to the task.

I’ve been nothing but kind to beans!! (Small sob)

Yikes, that was awful (and I HATE tetanus shots from the very first to the most recent).

One thing that stops bleeding faster than anything else I’ve found is to pack the cut with turmeric powder. Also antiseptic, so double bonus. But you need to wrap it or cover somehow so you don’t stain something in the minutes it takes to stop the blood.

Neither of the above… they taste like dirt to me! (DH doesn’t like them either and so I have had no incentive to try to figure out how to prepare them.) I do appreciate the offer of reliable recipes but I’m better off rehoming them.

Direct quote from my nephew about mushrooms!

I’m right there with him… the funny thing is that I remembered to put mushrooms on my list of stuff to avoid!

I have never heard of this but good to know since I have copious amounts of turmeric powder at home. Do you simply apply the powder to the cut or do you make a paste with it?

I never heard of it till my mom told me. I think someone else told her because it wasn’t a remedy when I was growing up :joy:.

No paste — there’s blood for that

I just take out the turmeric from my spice box and stand over the sink, then carefully spoon it over the cut and pack it in. Shake off the extra. Use something to protect / cover it for a bit so it doesn’t go everywhere else (a paper towel or plastic bag / wrap. Usually works pretty fast. Then a bandaid or similar.

LAST WEEK OF THE SEMESTER!

For two adults in San Diego:

Breakfasts: Starting off with toasted chocolate bread from a favorite bakery. Followed by whatever it takes to help me finish out the semester.

S: takeout - Chile verde burritos

Su: (tonight) Taco salad - salad

M: Cheese and spinach pizzas, salad - vegetarian

T: Will use the leftover taco filling from Sunday’s salad to make taco soup - soup

W: A rare midweek dinner out before an evening event.

Th: I’ll likely graze at the pre-Commencement reception. Husband will forage at home.

F: Shrimp fajita quesadillas with guacamole - seafood

Have a good week!

Hello to everyone from the suddenly a bit humid and stormy Twin Cities of MN where we have survived both the Spring Musical and the skating competition. All I have left to do is finish the spreadsheet with everyone’s volunteer hours and get that to the membership person by Wednesday morning. Which is why I’m posting this because I need a break from that. Hoping to get back to more ordered eating of “real food” cause there has been way too much takeout and convenience foods around here.

Actuals and Plans for 2 adults and 2 growing girls:

THurs: Plan was for cuban pot roast but when I opened the pork shoulder package things were a bit “funky” and not in a good way. Gyros (costco) the usual fixings

Fri 17: Mango coconut chicken curry (costco) over rice

Sat 18: Got chewed out by the head referee for not having transportation volunteers all scheduled because 1. i didn’t have volunteers, and 2: the judges who needed rides to the airport kept changing their flights. I cried and drank wine. Mr Autumm grilled brats and I don’t even know what they had

Sun 19: Last day of the competition. little one competed. Mexican takeout.

Mon 20: Tonight! Both kiddos skate. White chicken chili in the crock pot

TUes 21: Severe weather possible and I have a skate board meeting. might zoom in. Clear out the fridge leftover buffet

Weds 22: Big kiddo skates. Both have dentist appts around lunch. Pork meatball bahn mi? I have all the ingredients except for daikon

Thurs 23: Leftover white chicken chili or the bahn mi if it doesn’t’ happen Wednesday

Friday 24: I work, girls have no school. Probably pizza so we have leftovers for lunches over the weekend

Take care everyone!

I forgot to add the meal planning highlight of the past week! You can tell where my brain has been. . .

My 14 moon old dishwasher is working again! the new pump heater thingy was installed on Wednesday. It died March 11.

I can bake again and make messy dishes and soooo happy. I don’t know how I survived April without it
