Weekly Menu Planning - March 2025

Hi everyone

Really cold weather again here in nyc after a little warm respite (67 high one day, 22 low the next), but rain in the 40s is a-coming, so now I am just bracing for everyone around to get sick again from the crazy swings :woman_facepalming:t2:

It’s been a bit intense on a few fronts, so I’m trying to simplify food.

Thinking about what to make for a friend and her family – I offered to take over dinner one day this week. Maybe Thai Curry with Chicken – one of them is allergic to peanuts and another to shrimp, so they never eat Thai food outside (also I get to use a new-to-me curry paste I finally found – Aroy-D). Will ask them what the kids would prefer.

I succumbed to corned beef at Trader Joe’s in a moment of seasonal weakness, so I cooked it sous vide (and it should be enough to satisfy any corned beef cravings for the year, if not two :rofl:). In retrospect, not a bad purchase for the same price for 3lbs as for a single corned beef sandwich in my neighborhood :thinking:.

Ideas for the week:
Pongal / Rice & Lentils – I had a taste of the delicious offering at the temple last week, and now it is a full-blown craving. With TBD vegetable + papad + yogurt
Butter-Roasted Salmon or Salmon Burgers + Spinach Rice
– Kheema Macaroni in Pastitsio form – leftover, but I have to make more bechamel.
– Mom’s pan roasted chicken + salad + potatoes
Scallion & Ginger Steamed Salmon + green veg+ rice
Curry Chicken Noodle Soup yet again :joy: with green veg, potatoes, and fat noodles.
– Corned Beef — maybe as a sandwich, otherwise with toast + assorted veg (not boiled) or a salad.

Also need to prep some lentils and soup to supplement the week.
And I have a lot of bone broth to use up.
