So nice to hear from you — please come share actuals or just chat, if planning is not in your realm of possibility these days (I know I’ve had plenty of that these past two years).
I love those shredded potatoes! I just made note of them over on the TJs Ideas / Quick Meals thread — they make a great egg dish a la tortilla espanola, without much work. I have also used them in egg muffin cups, similar idea.
My friend’s teen daughter turned them into a fantastic side dish at thanksgiving by adding just sour cream and cheese.
Who doesn’t love easy meals?! I’m always browsing through other folks’ ideas here because it’s easy to get bored with my own.
