I 100% agree with what you said. I’ve been using the disposable masks provided at my office each one of the days I go into the office. I would prefer to stay at home until I am 100% recovered but my employer is pressuring the staff to come into the office more and more so if I work from home until the crud is gone then I can guarantee you they will make me make up the time I have been working from home. 3 of my 4 closest friends work for the municipal or provincial govt, and they have all had to go back to the office more frequently, after working remotely for much of the past 6 years. The only thing helping one friend out and continue to work from home is that there are not enough cubicles or work stations at the office, because his Ministry gave up so many leases to save money when people were working from home. The Ministry needs to go rent more office space.

2 of those 3 friends have come down with a bug that does not want to leave over the past 2 months.

We were just in DC for young Spring Onion’s Feb vacation week (our 3rd time in the past 4 years) and did our 2nd tour of the Capitol so I had the soup on my mind but I don’t eat pork. How would it be without the ham hocks? Is there something I could sub in for them? (My husband loves beans and eats pork but he always goes with the flow.)

I’ve made this one often without the ham hocks, although always added in some diced ham at the end. I think it would perfectly fine with no ham at all if well seasoned. Maybe someone can chime in with a good sub - TVP possibly?

Funny, though. For this batch DH made a special trip to the store to personally pick out some ham hocks.

I have never made this but what about using one of those smoked turkey legs or wings. Or a bit of turkey bacon

Those wouldn’t work, either. I’m pescatarian and would prefer a vegetarian version of the soup. Thanks for the suggestions, though.

What if you used kombu for the umami?

ETA: and smoked paprika if you want the smoke flavor
