Weekly Menu Planning - February 2026

Continuing to cook for 3 in southwestern ON, for a softer food diet and a higher fibre low salt diet.

Monday, Feb 2nd: Mac and Cheese. I have some Gruyere so we will do a fancy Gruyere, Cheddar and Nutmeg version inspired by Martha’s Perfect tonight.

The pork roast I roasted Friday will be frozen this afternoon, and made into a Sunday sauce/gravy at a later date.

lemon oregano chicken thighs for those who want more lean protein.

ginger ale roasted parsnips

Tue, Feb 3: beef rouladen and potatoes

Wed, Feb 4: shellfish risotto

Thu, Feb 5: roast leg of lamb, maybe Kuku Sabzi, roast potatoes

Fri, Feb 6: maple ginger salmon, rice
