I’m not sure why I thought the ground pork was a good idea. It was faster, but sooooo messy! The dog was thrilled to assist with clean-up. However, there were two pleasant surprises coming out of this: (1) the tzatziki in the linked recipe was really good, and (2) I fried some halloumi (forgot I had feta) and DS discovered he really liked it. Win! Except now I have to share it.
Actuals for the last week of August, cooking for 2 in MN. Where the heat-index was 107 on Monday and the forecast high temp today is 70. We also had 3 major storms sweep through, lots of branches down in the yard (trip to the landfill mulch area with a van load) and a 7-hour power outage that required the small generator to keep fridge and freezer cool (plus a fan for us). Today’s baking plan will start making use of a giant, forearm sized, zucchini; I’m meeting my baking buddy for coffee and her garden-gift handoff this morning.
Mon and Tues: Salmon, sweet potato, peas, salad- spinach/watermelon/pickled red onion, feta, white wine vinaigrette with dried mint. Photo and recipe over on SOTD discussion.
Wed: (reheated from last week) Chicken & fennel, fresh mashed potatoes, leftover sweet potato, red grapes, peach.
Thurs: Breaded fish, a few mini-corn dog bites, rainbow veggies mix w/tomatoes, corn on the cob
Fri: Steak salad on spinach & rainbow veggies mix with tomatoes, pickled onion.
Sat: Shrimp with BBQ sauce over cheesy grits, broccoli
Sun (today): Curry Cod, rice. BAKE chocolate zucchini muffins
I am going to try to remember chicken salad on cranberry walnut bread around Thanksgiving when cranberry bread is everywhere but it may be turkey salad!
Lol. That’s been our Thanksgiving dinner for the last two years: roasted turkey on cranberry-walnut sourdough (with melted Swiss and lot’s of mayo). Sides have varied but have included cider-gravy (for dipping), roasted potato wedges, green beans, and carrot salad.
With just the two of us, it works. We’re planning on the same this year.
