No pics but I combined a serving of leftover mashed potatoes with a serving of bread stuffing, added an egg, made patties, dusted with flour and fried. Not bad! The stuffing was really bland (we always have very basic stuffing) so I upped the seasoning in the patties.
We didn’t have many leftovers because we ate at the fire station this year because my husband was on shift. All the families, girlfriends/ boyfriends and such came down. We also feed the city police on shift. My husband did the turkeys and did an extra turkey breast for home that I used to make hot browns and my granny’s turkey hash (for the freezer).
I made serveral pans of cornbread dressing (plus one for home/the hash). And I did the yeast rolls.
Everything you can imagine was there and as you can imagine with a bunch of firefighters…delicious
Unplanned but delicious use of leftover turkey: Pho!
I had a little pho broth left over from yesterday, supplemented by chicken broth from last week’s soy sauce chicken bones, which softened the over-spicing in the pho.
Add turkey and it was a good combination of leftovers.
Coronation Turkey tonight, made with mango chutney, curry powder, mayo, celery, raisins and fresh squeezed lemon juice.
A Mac and Cheese made with small bits and bobs of cheese: blue gouda, Gruyère, old Cheddar a and a local cheese called Wildwood, that’s a bit like a Canadian Appenzeller.
My fridge’s cheese compartment in the fridge is down to 3: Emmenthaler, rackette and parmesan. I will keep it minimalist because I anticipate gifts of cheese over the next 24 days.
The Woks of Life turkey recipe I tried this year (terrific) roasts on a bed of chopped onion, celery, carrots. Today I grabbed a big pot, added more chopped carrots and potatoes to a sautéed onion and some garlic cloves, later added the already cooked veggies. Water, chicken better than bouillon, 2 bay leaves s & p.
After it cooked and cooled a bit, I puréed it in my blender, mixed in heavy cream.

We happily ate turkey sandwiches and all the sides for 3 days, which didn’t leave us much in the way of leftovers except for just over half of a small loaf of whole wheat, cranberry-pecan bread. Today I built a strata, which I’ll bake in the a.m. for tomorrow’s breakfast (and the next day’s). I added Italian sausage, onion, gruyere cheese, eggs, milk and parsley.
Doesn’t sound trashy to me. Totally logical!
Almost all of the leftovers have been consumed or repurposed. I didn’t have a turkey carcass. All of the sides, snarfed down. Last night I cut up the remaining green chile corn bread and air fried them. Used to top beef chili that I made yesterday. The last item, roasted garlic gravy, is going into a pie today with ham and veggies.
Sometimes I think I enjoy repurposing leftovers as much as the original cooking.
It’s a challenge, an art, and a skill, with the added benefits that much of the time all those bits and bobs are more flavorful than the original. I also enjoy the process.

Eating from a ziploc—how have I never thought of that myself (said as a person who stashes a couple tiny bottles of Tabasco in her handbag in case of “emergency”). Well done, I say.

I carry around a small pepper grinder in a felt bag. Because I love fresh-ground black pepper. But often I go out with my coat with essentials in my pockets,which don’t have room for the pepper grinder!.
Me too! I love freshly ground pepper on French fries, and those little packets of black dust at most fast food places (and even the shakers on the tables of many restaurants) bear no resemblance to real pepper!
Which little pepper grinder do you have?
Well, the grinder itself doesn’t have any markings, but the little canvas bag that came with it and in which I store it says “VKCHEF” on it. It holds about a tablespoon of peppercorns, perhaps a little more, and has an adjustment for grind size. I got it on Amazon several years ago.

Mine was just a single grinder, which is just fine. I have no need for a salt grinder.
