I love it roasted too. Lately I tuck it into a pan of mac and cheese and sprinkle on some panko and broil on low untIl bubbly.

I had a really nice Cauliflower steak au poivre at a restaurant called The Loyal (no longer open) in NYC about 7 years ago. The chef was John Fraser. I can’t find a recipe online. Here is a photo and description.
Something like this
Roasted with pink garlic, dried fenugreek, dried lemongrass, s&p, topped with fresh lemon. Prep’d for dinner salad later.
