Thanksgiving 2021

My sister’s family went out of town for Thanksgiving proper and my daughter and I cooked a giant lobster instead of a turkey, so this weekend we did a “fakesgiving” with her family.
Shrimp cocktail and artichoke dip as apps. I dry-brined the turkey for 2 days in the fridge the spatchcocked and cooked it on indirect heat on the Weber with intermittent scatterings of applewood chips. The flavor of the meat and skin were fantastic, but it was quite dry. Sausage stuffing from a Martha Stewart recipe, but I used half walnut currant bread and also added some chopped fennel fronds before baking. We also had mashed potatoes and bok choy. My sister made a cranberry sauce where you don’t cook the cranberries and blend whole Myer lemons, skin and all - bold but good. Niece made a fantastic pecan chocolate chip pie.
