PERUVIAN TIRADITO WITH AJI AMARILLO AND LIME
This is a classic and delicious Nikkei / Japanese-Peruvian dish somewhere in between sashimi and ceviche.
I bought tuna for this, and decided to sear it before slicing.
The recipe suggests choclo / peruvian giant corn and sweet potato as accompaniments – I had fresh corn and mashed potato / cauliflower mix, so I used those.
The sauce is very simple – ginger, garlic, aji amarillo, lime juice, and cilantro – but delicious and with a real kick! Could be toned down with coconut milk, mayo, or yogurt.
This sauce would be great with cooked seafood too – shrimp or scallops would go very nicely, especially with the corn accompaniment.
