Now that I have ricotta to use up, I’m going through their ricotta recipe collections.

Had not thought to combine with butternut squash, but it was delicious. Would be great as a tartine too!

Albóndigas de Ricota (Argentine Ricotta Balls) look good, similar to Gnudi. And ricotta gnocchi is always lovely, this one with asparagus.

And lacy ricotta and brown butter cookies sound pretty good.
