ASPARAGUS TARTINE WITH RICOTTA AND MINT
Easy and delicious! I had already roasted the asparagus, so it was even quicker. I finished the asparagus with a squeeze of lemon and parmesan cheese, which worked nicely with the mint and ricotta.
Looking at the other spring tartines, I think fava beans (or green lima beans) would be lovely with ricotta too.
Bread was homemade from the freezer – the SE no knead with fridge rest. This was the end of the last loaf, so I’ll have to start some more.
