Would have been even easier if I had just pan-fried them as patties without any coating, because the potato doesn’t need much more, but I had crunchy croquetas in mind after @rosyred posted theirs!

The recipe in the book is for a dip where smoked salmon enhances the skordalia, but I converted it into fish cakes, which turned out predicatbly delicious – what’s not to love in a combination of garlicky potatoes and salmon?
I made the potatoes less runny than the dip version, and added minced salmon. Coated with panko and pan-fried. So delicious!
Trinxat , a combination of cabbage and mashed potatoes, I added garlic and a few different fresh herbs. My proportion of
cabbage to potatoes was on the heavy
side of cabbage, rather than reversed.
Some paprika was bloomed in a little evoo prior to adding the mash, browned on both sides and then topped with crispy prosciutto rather than the traditional bacon. A comforting dish for cooler days.

I think that’s probably more traditional than cabbage, there are no herbs or garlic in it either, nor is it sautéed with paprika!
