I suppose I’m a little late with IRISH SODA BREAD.

I would bake an IRISH SODA BREAD. I never have, and I should.

I make Irish Soda bread fairly frequently, usually with added wheat bran and wheat germ. The one I made for St. Pat’s Day this year had a 1/2 cup oatmeal flour ( oats ground in blender) which kept it amazingly fresh and tender for several days. I highly recommend ground oats in the mix of flours, I’m looking forward to repeating it. The recipe came from The View from Great Island website and I finally got around to making it after saving it for several years.

Not sure I would make many versions of stroganoff, but FRIED RICE has endless possibilities.

Oh, I was thinking of different proteins. Like mushrooms, chicken, a lighter seafood one, etc.
