Speaking of rice, which ones do you eat?

From what I can see yes. It was available for free ages ago.

I cheat. I use Zatarain’s or Gumbo Girls mix, and add my own …stuff. Lots of It.


No shrimp in this one.

I also like the Keralan Red Matta Rice.

I would have expected the polishing machine to be a lot bigger. I’m waiting for the next big thing in home kitchen gadgets: countertop rice polishers! :laughing:

Texture is not the only reason to wash rice. And someone can mess up rice with any method.

Tell me about it! Until recently I was the king of messing up rice. Then I decided to stick with one brand of basmati (Tilda) and did some googling. I used to use the classic (or so I thought) ratio of 1:2 rice:water, but the Tilda bag and website had conflicting information on that. One said 1:1.5 whereas the other said 1:2.5. I tried 1:1.5, and religiously followed the washing recommendations. It worked!

In any case, much as I love it, I can eat the stuff only rarely because of an allergy.

I use Bomba for paella.
