Ooops. I meant to say easy, but it is also quite good. Like most of the recipes in Les Halles, it is easy. For me easy means the ingredients are easy to find, there are no requirements involving challenging techniques, there are no operations that are unexpected or present timing challenges, and it uses pots, pans, and various weapons readily found in the kitchens of most people who do much cooking.
