Something New In Even Heating

Called AccuTemp, it’s a new commercial griddle its maker claims is even within 5F over its entire surface. The secret is apparently a permanently-sealed vacuum chamber containing water and either electric calrod tubes or gas heat exchangers. At set temperatures below 212F, the chamber is in a state of partial vacuum; above that, the heat and steam pressurize the chamber. It’s not clear what the max surface temperature is, but it’s at least 350F. The maker also promises near-instant recovery, i.e., no temperature crashing.

There’s also a heated top plate unit that can be added to turn the AccuTemp into a clamshell griddle.
