Shokupan and Pullman tins




I am not keen on non stick or aluminum coatings, and I don’t love the shape of the Emile Henry ceramic bread baker.

Does anyone know of a ceramic alternative to Emile Henry, that is more rectangular ?

Or a stainless tin that is not coated?

I am not interested in cast iron.

I guess this one has a silicone non stick coating

There are a number of companies who use the sikicine coating. Sur la Table for example also has one

I will look into it. Sur La Table might not work well for shipping to Canada right now.

I like the 450 gram size of this pan:

3 cups of flour would make a 1.5 lb / 680 g loaf of bread, suitable for the 9 inch long pan from USA Pans

I have loaf pans from USA Pan. The silicone nonstick works very well and they are quite sturdy, The folded ends are a little challenging to clean, but a good soak in hot, soapy water and a kitchen brush makes quick work of that.
