In addition to black currant jam with roast leg of lamb, my parents sometimes served wine jellies from the Trappist monks. Most of them were made of fairly sweet and often fortified wines. Based on how beautifully those flavor profiles worked, I think the Port idea could be spectacular. I also recall Sauternes and Tokay.
