Stir-fried iceberg with a little soy sauce & garlic & oyster sauce makes for a quick, delish, kronchy, savory lunch. Escarole, too.
Cooked Iceberg and Romaine is quite common in Hong Kong, delicious and satisfying cooked as you describe.
In our kitchen, when lettuce gets a little old and tired, we stir fry or toss in some noodle soup. Adds a nice crisp and crunch to a dish.

Yup, that’s exactly where I first had stir-fried iceberg — at a Chinese restaurant. It’s a great way of using up wilting lettuce, but I’ll even make it with perfectly fresh iceberg.
Also, our HK buddy used to make this for us late night after poker games to soak up some of the booze consumed
I also remember one of my favorite restaurant salads ever, back in my hometown. It was a huge plate of a variety of super-fresh lettuce with a delightful dressing that mingled with the pan juices of sautéed chicken and mushrooms. The lettuce would wilt ever so slightly and become nice and tender.

Romaine/Italian tuna crispy fried chorizo croutons/tomato/cucumber/boiled egg/pickled veg/anchovy and shards of Parm.

Here’s the first of many salads to use up those remaining 5 heads of romaine (gave one to my neighbor!):
Sort of a combo Caesar and Greek salads, put French feta (my fav) instead of parm, used Serious Eats Caesar dressing minus anchovies and parm. Homemade croutons.
You put in the egg yolk then add the rest, should not sit around once you add the lemon juice.
I notice you can’t see the Japanese cucumber.
Agree. I tried avocado heated through and it was horrible IMO. I could barely swallow it.

My dinner was healthyish tonight: CSA lettuce, Genova tuna, peas, corn, red bell peppers, cukes, radishes, goat cheese, and a lemon-tarragon vinaigrette.

I was very happily surprised that we liked cooked Romaine in a stir-fry.
It’s nice charred, too.
Grilled shrimp and mahi mahi on a bed of romaine with marinated tomatoes and cucumber, corn, grilled onions and feta. Kinda of an end of week fridge clean out.

Chopped iceberg, celery, cukes, flavor bomb tomatoes, corn from one COTC, all tossed in a lovely, garlicky sour cream mustard dressing with fresh dill & parsley, and topped with blue cheese, tuna, and HBEs.
Nice fridge!
