I’m going through another farro salad phase.
Sort of like this one from Serious Eats. Mine has golden beets, olives, green onions, sliced almonds , thyme, and the peppers in vinegar I made so much of this summer. The one day I don’t have feta cheese. ![]()
I so wanted to try one with roasted kabocha squash I made but I just can’t seem to embrace roasted squash! I think it’s just too densely starchy for me.
