First time growing and harvesting these “cow peas”, [17549494071506191317464405773977] [PXL_20250810_031247919] [PXL_20250810_032824428] …and found this thread searching the Internet for cooking them fresh for salad! I’m going to use these Italian frying peppers, and some of this corn salad with some of these beans. Thank you @ChimayoJoe ! Most recipes are from canned or dried, and for a long cook.

It’s always tempting to add more…right now there is corn, cowpeas, sweet peppers, red onion and a bit of garlic. Maybe Fresno chili, celery, parsley or cilantro or another herb?
