It’s always tempting to add more…right now there is corn, cowpeas, sweet peppers, red onion and a bit of garlic. Maybe Fresno chili, celery, parsley or cilantro or another herb?

Snowcap Salad - a favorite that was served at almost every birthday / holiday / celebration meal when I was growing up. Layers - lettuce (iceberg per recipe, bagged Italian blend today), thawed from frozen peas, bacon crumbles, hard boiled egg, halved grape/cherry tomatoes, shredded Swiss cheese, (I omit the finely sliced green onions). Dressing gets “frosted” on the top layer of lettuce: equal parts sour cream/Miracle Whip (mayo tonight), with 2 tsp lemon juice and dash of salt, pepper, garlic powder.

Inspired by this recipe , and last night’s Alex vs America (from which Alex was eliminated in the first round, duh) . The episode featured three Thai chefs, with various renditions of Thai beef salad.

Four different chinese salads yesterday, I forgot pics of 2 but all were absolutely delicious!

Shredded potatoes in a henan-style pickle dressing, spicy cabbage (we ate most of the cage before I remembered the pic), shredded potatoes Sichuan style, and sliced lotus roots and woodear mushrooms alo Sichuan style.

Fresh and so flavorful!

I’m going through another farro salad phase.

Sort of like this one from Serious Eats. Mine has golden beets, olives, green onions, sliced almonds , thyme, and the peppers in vinegar I made so much of this summer. The one day I don’t have feta cheese. :man_facepalming:

I so wanted to try one with roasted kabocha squash I made but I just can’t seem to embrace roasted squash! I think it’s just too densely starchy for me.

MOAR toona salad for my boo: Genova yellowfin in olive oil with Duke’s, lemon juice, WWV, celery salt, brown mustard, Worcestershire, chopped golden peperoncini, chopped celery, finely chopped celery leaves, capers.

Just realized I forgot the onion powder :frowning:

Probz bc I had to listen to the two Krazy Boyz cry and scratch at the kitchen door for the entire prep time, which was pretty distracting grinning_face_with_smiling_eyes:
