I’ve made my own preserved lemons from an online recipe, and I use them when I roast chicken too. I don’t go through then fast enough, so I probably won’t give up the fridge space again, but they really are fantastic in your roasted and baked dishes.

I’ve got a pandemic batch jar sitting in the fridge
(and a couple in the pantry)
Preserved lemons would be a nice addition to the farro salad .
