I don’t care for caraway, either! Cannot enjoy seeded rye. I buy pumpernickel or the swirled rye/pumpernickel.
I disliked caraway until around the time I was 35. I don’t mind it now. Maybe it’ll happen for you later in life
It’s funny how tastes change. I have grown to like marmalade in my 40s.
I currently can’t stand ketchup. I liked it when I was younger, and my aversion is around 3 years old. I can only tolerate mustard on hot dogs, sausages and corned beef/ Montreal smoked meat.
I disliked seeded rye as a child, and avoided it for decades. It was the unexpected caraway in Jasper’s braised cabbage that changed my mind, and now I enjoy it in moderation.
It’s called for in Puck’s Austrian beef goulash and it works with all the other spices.
I recently have found I cannot enjoy hoisin sauce! It makes me gag, but there is no problem with the usual components, separately. I’ve not had covid, it must be ageing.
My husband also dislikes caraway - we don’t have any in our spice collection. When a recipe calls for caraway, we just omit it.
I collected all of the ingredients for your pimento cheese recipe today. I bought an 8 oz. brick of Tillamook sharp cheddar for it. I also found Duke’s mayo, which surprised me (we live on Cape Cod). It was on the top shelf and was pretty far back. I got hit in the head by a bottle of Kensington’s trying to get at it but I decided to go for the Duke’s! Looking forward to getting it all put together - I’ll keep you posted.

Yes! Duke’s mayo is the way to go. I’m a convert to the one true Duke’s, LOL.
A friend shared the same recipe (except no cream cheese) and swore it made the best pimento cheese. There was definitely something off flavor and texture wise, although I didn’t tell her that. The addition of cream cheese now makes perfect sense. The missing link. Thanks.
Lamb riblets used to be a cheap option in the meat section, but you never see them for sale anymore. Roasted with a barbecue sauce, they were delicious. Not sure where they all disappeared to, but wish they would reappear.
I also found duke’s for the first time around here very recently. I bought the big jar and did a taste test against Hellman’s Mayo.
And what did you think? I grew up on Miracle Whip but switched to real mayo when I left home and tasted it for the first time. We always buy Hellman’s. The Duke’s was a rare find, and it was 6.99 for the only size they had, 18 oz. - so kind of expensive compared to what I can buy 30 oz. of Hellman’s for where we live.
Hellman’s was on sale about month ago. $2.99 for a 30 oz. Jar. I picked up two. Duke’s was like you say. $6.99. I won’t pay that for a jar of mayonnaise.
I wasn’t looking for it, to be truthful. My husband played golf this morning and I decided to pick up a few groceries and get a little bit of exercise so I walked the whole store (I don’t normally shop at this one). It was nice to get out of the heat and to see what they had. I decided to buy the Duke’s since in my mind, pimento cheese is a Southern specialty and people from the South love their Duke’s. Haven’t tasted it yet…Sir Kensington tried to jump in my cart but I put him back up on the top shelf with the rest of the Duke’s.
Sadly, even medium sized Hellmans costs around $7.99 Cdn ($6 USD ) in Canada lately. Duke’s isn’t available. Sir Kensington’s costs more than Hellman’s.
All of this. Every once in a while I can snag a 16 oz. jar of Hellmann’s for <$6, but it doesn’t happen often.
I bought Duke’s mayonnaise for years because at $3.49 it was competitive with others. When the pandemic hit and the Sh*t hit the fan with prices going sky high I stopped buying it and went with store brands. I’m happy with them. Duke’s is really no big deal if you ask me. But I hope you like it and think it’s worth it.
