I’ve had this bookmarked for a while but thought it had Thai curry paste in the sauce. Was tempted to put some in, but followed the recipe and really enjoyed this. Loved the rice soaked in the sauce at the bottom of the bowl too.

Ugh. Can you add it to some veggie soup? Or doctor a bit for burritos?
Add ground meat of your choice and spices and make stuffed peppers.

Can you turn it into arancini, with a cube of mozzarella inside?
Stuffed pepper filling is a good idea. However, I think there’s something about Arborio rice that tastes funny to DS. He hasn’t liked it in a few different recipes. (And the container I used - used up - today was well before its best-by date.) so, peppers for one, maybe?

Maybe. I have an unopened box in the pantry and I bet he’d be willing to try a bite if I make a new batch. But the thought that my carb-loving kid might have found a carb he doesn’t like is kind of mind-blowing!!! (This is the same kid who, at age 3, did not want any of his Halloween candy - we traded m&ms for Cheez-Its. )
I’m very textural, that’s why I wondered.
(Some textures i disliked as a kid I have taught myself to eat as an adult — I don’t think I could have articulated it when I was a kid though)
If you make tomato rice with basmati would it have a different outcome, I wonder.

I love Tom Kha Gai, but I’m wondering if the meatballs are worth the extra effort instead of just using chicken thighs or legs?

I really liked the meatballs with the seasoning. It was great as leftovers today too.
this improvisation just looks too PLAIN. throwing cheddar cheese on top does not cure all deficiencies but a lot of cooks seem to think it does.
If what was underneath was south indian tomato rice, it would be delicious. Ginger and curry leaves in the tempering would make it south indian. Or “mexican” rice just by adding garlic, lol.
