Morels - what would you do?

I have a pound of fresh foraged morels. What would you do with them? I also have asparagus and fava beans to add or not!

Oh my, I’m jealous. So many options, but one of my favorite is sautéd with a few shallots, black pepper, finished with some cream - i love over steak but really over almost anything, even over the asparagus.

Skip the beans and do a simple morel & asparagus sauté or … add to pasta. Morels make a nice sauce for steak or pork tenderloin, too.

Someone else asked this not long back. Oh here it is..

Morels and favas and asparagus go great together, and are lovely over meaty white fish, or then steak.

Pasta is a good carby foil as is risotto, and they might stretch the morels further.

If you’ve got plenty, consider exploring Kashmiri Gucchi (morel) Pulao, which is a delicacy.

Morels are my favorite mushrooms, and my last meal on the Execution Block might be a Spencer steak buried in sauteed Morels.

HOWEVER, raw and undercooked Morels are mildly toxic, and have caused poisoning and death. The best info is that this is due to hydrazine compoumds in them that change with cooking.

YES!! I’d make some type of homemade pasta to go with them. Maybe a spinach pasta with a very light olive oil and less cheese than this picture.
