Have you tried Ital brand DOP? My favorite. Safeway usually has. Lucca, the small Italian store on Valencia SF that closed down a few years ago … one of the managers there agreed with me that was the best one.
Never seen 'em. I’ll keep an open mind and a peeled eye.
Re: tomatoes in Bolognese sauce, FWIW this recipe for a traditional ragù alla Bolognese from the Accademia Italiana della Cucina includes both strained tomatoes and tomato paste (and wine, and optionally milk):
To be fair, the weight of strained tomatoes in the recipe is half of the weight of the beef.
I like tomatoes in my Bolognese.
All these sweet grandma stories, and my “Sunday sauce” growing up was rarebit, made by my Welsh grandmum. I love red sauce and love Bourdain’s tracing of it. I forgot which series it was; but I loved that episode.
Italian Italian. I’m trying to recall the exact region.
Yum! I’ll have to try it this way sometime soon.
One of my favorite pasta shapes…because I like to play with my food….
