Tortilla Bowl salad (h/t @ScottinPollock in another thread for posting the bowl making method).


I made a couple of small tortilla bowls - unfortunately I only had 6-inch (nominal) flour tortillas so the salads are pretty small, almost too small to work with.

Contents were layers of leftover “Italian” chicken shredded, shredded parm/provolone, dab of Ken’s ranch dressing, mixed greens (repeated above for 2nd layer) and topped with some tom slices and more cheese.

Turned out pretty tasty. My wife was pleasantly surprised I’d repurposed the leftover chicken in a salad, because I had been talking about just using it as taco meat.
