Also, and possibly more commonly, called beluga lentils. I’ve had them mixed in with other grains and pulses. IIRC, they hold their shape better than other lentil types.

While I caramelized onions, i added thyme, pepper and sherry to some white kidney beans from a can, and simmered them , then combining the 2 , placing them in an ovenproof dish, topping with gruyere and broiling.
I liked them but 1 of my DCs found them too bland, so I probably won’t make the lentil and farro version.
I thought the flavours were a nice change with the beans.
One of my other DCs doesn’t like lentils, but wants beans daily (and beans not mixed with farro or grains) , hence the substitution.
I thought it worked quite well.

I made the mistake of throwing together a big lentil dish a couple months ago by cleaning out the pantry and did not write down what I put into it. Cooked it and froze most of it in a bunch of 12 ounce containers. Lentils, kale, carrots and celery, but what else? Are those little white things some sort of quinoa? Is that smokey flavor small bits of bacon? LOL!
Whatever went into it, I love it! Every time I pull one of the frozen containers out of the freezer I know I am going to have a great lunch.
And I still have no idea of what went into it.
Hopefully I have a container of it left in the bottom of my freezer…
I bought several Sharpies a couple months ago. I write the date I am freezing whatever I’m freezing, and what it is, on Scotch tape, on everything container or bag going into the freezer now.
Sometimes I even write a Use By date.
