Interesting. EVOO? Even with a hand-whisk, which I use for dressings, I find it gets an unpleasant bitter note.

A few days ago I read an article that rated Dijon mustards. Grey Poupon came out on top, but there was a paragraph warning that Trader Joe’s Dijon is stronger than any of the contestants (for some reason, they didn’t include TJ’s in the ratings). Hmm, I didn’t remember that it was particularly strong, and I tasted some from the fridge to confirm–not strong.
But the jar in the fridge was probably four years old. I got a fresh jar, and woo-hoo! Strong! Sinus-opening! Just as I remember from what I had in France.
Yes, TJ Dijon is strong! I kick myself for buy pricey Maile for years.
What I like about Faillot and Roland is their very well rounded taste (plus, I can always find a great deal on them at World Market for Faillot or Spec’s for a quart sized jar of Roland). For a hotter mustard, I have always liked Mr. Mustard or mix it yourself Colman’s. Missy Mussy as my wife calls it is getting hard to find, the last purchase needing to be online.
Or, you can use “light” (yes yes I know) olive oil. I’ll never tell.

Light versions of many things are quite good. IMO opinion lite Twinkies are better than the originals. I just got a four pack of Central Market light ginger beer. Oh yeah.

HELL NO. Once opened, it goes into the fridge, NOT back in the cabinet or pantry!
And the stick of butter I’m in the process of using goes from fridge to counter butter dish and stays there until I’m done using it. I’ve also never refrigerated my sesame oil, but it makes sense to avoid spoilage (I don’t use it quickly enough).
