Somehow our stocking up has included a lot of andouille sausage. Ordinarily it would have meant Jambalaya or gumbo, but I am trying to avoid too many carbs. It occurred to me to consider cauliflower with either recipe.
Of course daughter doesn’t want shrimp or sausage, husband doesn’t want dark meat (present company excluded.or is that excepted ?)…blah blah blah.

What about a simple sheet pan dinner with sausage roasted on one baking sheet and cauliflower—and other veg as you wish—on another? Both sheets would get a splash of olive oil at my house. Flavor with herbs or chiles or whatever pleases you.
Adding cherry tomatoes closer to the end of the cooking time would make the whole thing a little saucy.
