Irish mac + cheese made with Kerrygold Blarney and Kerrygold Dubliner. I added the clove, nutmeg and bay leaf.

I omitted the cream, Swiss and bread crumbs. We liked it a lot. I used 2 cups dry macaroni: 3 cups milk: 3 tbsp butter: 2 cups grated cheese

Irish Fisherman’s Seafood Stew. I am making a minimized version of this tonight.

My lamb isn’t arriving until Thu, so Irish stew is not happening today.

Have to say, that recipe doesnt “feel” Irish to me. Tasty for sure. Just not Irish.

It is the sort of recipe we often cook as a Mediterranean style fish pie, topped with puff pastry rather than potato.
