What do you like to make with buckwheat?

Came back to this thread to share this DL recipe for buckwheat choc chip cookies. My sister bakes these frequently for birthday parties.

Wow - this could not have come at a better time, thank you! Just got a sturdy blender and have been making buckwheat flour and wondering what to use it for besides pancakes. Those drop scones and galettes are calling my name!
