So, I went to a wedding reception this past Saturday at what has historically been Seattle’s toniest restaurant. The bartender was a maestro, and was using perfectly clear large, single cubes.

I asked him i they were made in house, and he said no, they just buy them premade.

The article you cite includes several reasons why top-end places might not want a Kold-Draft machine. Frankly these cubes may be one of those things that buying from outside–provided the cubes are reasonably priced–is just easier, maybe even better.

Let’s remember that dirty ice machines are notorious breeding grounds or salmonella.
