Hot weather dinners - your favourites

So, this morning, the central heating system got its annual service. As part of the maintenance, the guy had to turn the heating on. House has been an inferno.

I don’t know that I could go so far as to say I like heat and humidity, but I seem to do much better with it than most. I find spicy foods are a big attraction when it gets very hot. Thai is great, but this being Texas I gravitate to spicy Mexican food, especially anything loaded with jalapeños, serranos, chipotles, whatever. On a hot summer morning, ghost pepper sauce on eggs or zippy harissa on avocado toast is terrific. My pequins are starting to ripen, and I look forward to the harvest. Hatch pepper festival is in full swing at Central Market, a sign that summer will soon (in a couple of months?) wind down. I am now officially hankering for a Hatch chili cheeseburger!

As phoenikia said, fish and shrimp tacos, with cool fixin, are amazing. Gazpacho starter for those. Beans and rice on the side, of course. I love mixing tomatoes, or pico, and lettuce with beans and rice. So long as I can cook it outside when it’s hot, I’m good. Like you, I also long for the harder hitting picantes. I’ll make the pico with habaneros when the heat in the air rises. Having some cold brew sure doesn’t hurt, either.

i chill them with ice cubes and use 100% buckwheat soba noodles. Delicious.

still warm so a lightish dinner on the patio is planned. Nigel Slater’s smoked salmon and cucumber spread with Peters Yard crackers. Maybe some cheese after. And fruit.

The birds kindly planted another pequin in the front yard. It is about 2’x2’ now. The old one is between a live oak and the garage, pretty much entirely shaded. The one in front gets the afternoon sun. It is interesting to compare how they do. The shaded one is, of course, much older. The shaded one is well ahead of the one in the sun, both as to the amount of fruiting and the pace of ripening.
