Pink gravlax for Easter weekend!

Flavorings this time: citrus zest, pepper, vodka, smoke. Slightly more sugar than sugar for flavor.

I sliced and tasted twice, and let it cure 2.5 days.

Turned out well — lovely flavor profile, slight sweetness, and nicely moist.
