Oh, well in that case I want to change my answer. I would consider using a stainless steel cutting board when using someone else’s knife.

Yeah, and my main cutters are relatively soft SS.

My mom has a glass one. Drives me nuts. Fingernails on chalkboard nuts.

IME, one might cut food directly on the stainless prep table in cases like dividing bread doughs, slicing a cinnamon roll log into portions, or trimming pasta shapes. But I wouldn’t want to chop parsley on stainless.

Hadn’t thought of that. But I do do this (dividing dough, pasta cutting) on my granite counters using a plastic knife or dough scraper.

I don’t know what to say if the management can’t or won’t buy enough real boards. Maybe someone’s getting kickbacks from Nella.
