what’s your analysis on these stamped cookies after a few days, @MunchkinRedux ?
i’ve been trolling around on the internet for stamped cookie recipes and honestly none of them get rave reviews for taste.
I’m definately warming to them. I think the flavor develops over time. I find myself looking forward to having one with afternoon tea, and am pretty sure I’ll make them again next year. If I had to choose, my vote would be for the chocolate-gingerbread version.
I’ve also been looking for other cookie recipes suitable for stamping and glazing, and not finding a whole lot of interest. That said, I’ve made a note of a couple of them. The darker cookies are obviously more suitable for the glaze, but I think a glazed lemony or vanilla cookie would be suitable for “not the holidays” time of the year.
ETA: Regrettably Nordic Ware does not offer flour weights. Based on reviews (I’ve read a lot of them in search of the answer), I think their cups run heavy. 135 g. maybe? Maybe more?
ETA some more: I love the whole stamping/glazing business. I’ve been mooning over a couple of sets more (I have Starry Night).

Alton Brown’s egg nog is aging in the fridge. Love that stuff. Next up is vanilla ice cream and peppermint patties as mix-ins from The Perfect Scoop. I’m also going to attempt the buttercrunch toffee in the same book as a birthday present for my mother. She loves it.
I thought about using some egg white with chopped pistachios for some brutti ma buoni.
My pistachios were finely chopped, and not too consistently, and I decided to add chocolate chips. I think the fine bits that were almost pistachio butter had the oil separate from the nut on the lower layer and spread under the glossy top.
So… I created a new ugly but good crispy chewy cookie that I call the Macaron Mullet. Macaron on top, party on the bottom?

This basic rolled sugar cookie recipe was recommended to me as one that doesn’t spread, so good for stamps or engraved rolling pins. Easy to modify the flavor from simple vanilla, too.
Iced Spiced Hermits recipe from Baking with Dorie. These cookies are soft and chewy. I substituted finely candied ginger for raisins and melted milk chocolate with some butter for the powdered sugar icing. Mine have a very intense flavour because of the powder ginger and candied ginger.

I know 2 who took paxlovid , stopped very soon because of extreme diarrhea and upset so when I got Covid from my daughter, I turned it down.
I took Paxlovid, and didn’t get diarrhea, but I think the Covid attacked my heart.
It tends to attack the lining of the blood vessels. Paxlovid has certainly helped many people I know, who might have had a worse experience without it.
I’ve been posting results photos on WAYB (Nov and Dec) and am on-track to be able to mail boxes late this week - 3 or 4 varieties yet to go. I am desperately juggling for freezer space for the last few batches, and my meal plans this week changed to use up breads / buns occupying too much room in my upright freezer. The ice packs usually kept in a bin have already moved to a box in the frozen garage. My baking-buddy across town called Sunday and we laughed together about her frozen-pizza-week plan to clear space.
I’ll post a group photo and cookies list when boxes are mailed.
