I saw some cookies that Pati Jinich made the other day with a cornflake coating that might be interesting. I would make them smaller than she showed them on her show.

In the Greater Than The Sum Of Its Parts division, the soft glazed gingerbread cookies (both versions) with DL’s pumpkin ice cream. Out of this world.

I wonder if it might be ginger overload to pair with those cookies … You should post on his site, maybe won’t accept a photo though.

Have started my baking: I had to use up some 2022 vacation, so took yesterday and today off. Mostly just baked while listening to the Pogues non-stop. This is what I have made so far:
Peppermint Bark
Pretzel Toffee bark ( 2 batches each so far of these… will likely make about half a dozen of each by Christmas)
Sweet and Spicy Pecans
Whipped shortbread
Austrian Raspberry shortbread
English Toffee bars
7-layer cookies
Salted Caramels
up next: Panellets
Will likely make Dorie’s Iced Spiced Hermits with ginger at some point this month, but otherwise will just be additional batches of the above

I’m going to live vicariously through this thread. No baking for me this Christmas as my health took a nosedive this year, and I don’t have any energy for baking.

Tonight, dough for Dorie Greenspan’s jammers (a shortbread, basically) made, rolled out and fridged for a later bake. I’ve made these for a couple years - they are laborious, but worth it, and they use up my homemade jam.

Dough for a first-time bake also into the fridge tonight: a pistachio/brown butter icing drop cookie I’ve been eyeing for a couple years. I remembered at the last minute that I bought a pack of gel food colors last year, and proceeded to stain the crap out of my hand tearing off the packaging. I’ve never used gel food coloring before so I was pleasantly surprised I was able to get the pretty pistachio color I wanted on the first try.

Gels are very intense, very easy to add too much!
