I have chickens so I know exactly how old my eggs are. Today I steamed 4 eggs for a salad - 12 minutes and then ice bath. The eggs were 48 hours out of the chicken. They peeled perfectly. I don’t know any other method that would work like this and believe me I’ve tried all of them, including instant pot. I am 100% sold.
Now that’s an endorsement. 48 hours and they peeled. Now, I have faith in making my farm kid eggs into egg salad. Great technique.

I want to report back your inspired egg salad sandwich turned out really good. It might have been the first one I ever made and really hit the spot. I added pickle and Dijon. The only bad part was I only had buns for bread and only two of the buns didnt have green stuff growing on them. Haha. True story. It was delicious and my cough has cleared up, so thanks.
Tried this tonight - the one egg I cut into did indeed have a nicely centered yolk. Will report back as I eat the others!
