Yes, I read somewhere that flipping the carton on its side for a bit helps the yolks get centered. I usually do it if I remember, but I can’t say the results are always 100% centered yolks.

oh no. im not here to tease people. I thought you found the picture I posted. It’s just a random find. But there are a lot of different purples out there. Some of them are a bit hard to cook. Some smaller ones take longer to cook than bigger ones. Starch level kinda drives the bus

My SIL said that she slowly stirs the eggs while they’re cooking one way for a minute, then the other way, back and forth. I haven’t tried it, but her deviled eggs always have nicely centered yolks.
She’s simmering them, obviously.
I will have to try this! I am a simmerer too, although generally I set a timer and walk away. Probably worth the extra effort when you really want the deviled eggs to look perfect.
Sorry so long in responding. I tried the steam and your time rec., and it worked beautifully. 6 at a time, and they were right on.
